Cuisine, a definite highlight of any SeaSpirit

cruise is the expertly prepared cuisine of executive chef Steven Howard, a nationally recognized chef, who is starting his third SeaSpirit season.

Howard joined SeaSpirit after nine years of creating gourmet delights for Minnesota-based D'Amico & Partners, who operate several fine restaurants in Minneapolis, including D'Amico Cucina and Azur. In 1992, Food Arts magazine named Howard one of "America's Poets of Pastry." He also appears in the book Great Desserts from the Great Chefs, published by Chronicle Books, available this fall.

Howard's menus on the SeaSpirit reflect the region where the ship is sailing. "Wherever we are, I try to have food indicative of that area," he says.

On last year's New England cruises, for example, the menu was filled with savory seafood dishes-including plenty of fresh lobster and crab. For last season's Caribbean cruises, Howard researched Caribbean food extensively, creating dishes like pork and banana stew and strip loin served in a red wine and fig sauce. "The food last winter was a lot of fun," he says. "We really spiced things up."

SeaSpirit guests will also appreciate the wide variety of baked goods prepared daily on the ship, from the fresh muffins, danish and croissants laid out for breakfast to the freshly-baked bread served with din-

ner.

And Howard strives to create, healthy, nutritional meals. He uses little or no butter in his cooking, and prepares all soups using vegetable stocks rather than meat stocks. "We want to put out great, health-conscious food," he says.
